pips meadery nn wildflower Bieren in the shadow of theNN is our Fig mead with Wildflower Honey, Madagascar Vanilla beans and Aged on Oak Spirals. We've tried in the past with Blind Lights out to create our interpretation of a Barleywine like mead, and NN is our most recent attempt. Made with a blend of honey, the opening is definitely fruit forward with notes of date, fig, raisin, and dried cherry. The Oak spirals add structure and a bit of needed tannin throughout, while the vanilla is more to smooth
